Salsa Matcha Recipe

When thinking about delicious foods that pack a major nutritional punch, salsa is truly amazing. Full of Vitamin C and other immune-boosting functions, piling your chips with chili-rich salsa has so many health benefits. Here's a delicious recipe written by a local chef & food artisan, Kaitlyn Paul, a proud graduate of Artemisia Academy who you can find on Instagram @frankasaurusrex.



Salsa Matcha


Ready in 20 minutes

Serves 8 people


Ingredients

  • 8 oz Dried Guajillo Chilis

  • 8 0z Dried New Mexico Chilis

  • 1 head Fresh garlic - peeled and separated

  • ¼ c Toasted pepitas or sesame seeds

  • 1 Orange - zested and juiced

  • 1 c Olive oil/ Neutral Oil

  • To taste: Salt

  • 1 tsp Cumin

  • 1 tsp Coriander


Preparation

  1. In a cast iron skillet, layer chilis and garlic in a single layer and cook over medium high heat, until chilies are dark in color, and garlic is blistered. 

  2. In a food processor in batches, add chilis, toasted pepitas, and garlic to create a chunky pureé. Add in ground spices, orange zest and juice.

  3. Slowly stream in oil to combine, and scrape down the food processor bowls edges.

  4. Season with salt to taste! That's it! 


Tips

This is a mild version of what you can make. Feel free to try out different chilis for more spice!
